White Chocolate “Wedding Cookies”

I wish I knew where the original recipe comes from, but I just know someone brought these to our wedding. She gave us the recipe, and she got it from one of her friends.

Ingredients

1 and 1/2 Cups Marshmallows
1 Cup Rice Krispy Cereal
1 Cup Shredded Coconut
1 Cup Craisins
1 (11/12 ounce) Bag of White Chocolate Chips (about 2 Cups)
1/4 Cup Shortening or Coconut Oil

Instructions

Put parchment paper on a cookie sheet. Set aside. Mix marshmallows, cereal, coconut, and craisins together in a big bowl. Set aside. Put white chocolate and shortening in a glass bowl and microwave for 30 seconds, then stir. Microwave for 15 more seconds, then stir, then repeat until it is completely melted and smooth. Pour over the marshmallow/cereal mixture and mix until all is coated with the chocolate mixture. Spoon cookies onto the parchment paper and put in freezer until hardened. Once hardened, they should be okay to stay out at room temperature unless it’s especially hot.
