Sorry I don’t have a professional picture of me in a spotlessly white, beautiful kitchen. I don’t have one of those. I’d wager that most people don’t. My kitchen right now actually used to be a laundry room. In other words, no pictures of me in my kitchen are coming. Sorry to disappoint. But you know something? It really doesn’t matter where you cook or bake. Whether your kitchen is big, small, ugly, beautiful, or just weird, it doesn’t matter. You can make great food wherever you are!
Anyways, I’m Emily. I’d like to say I’m the one behind A Cookie a Day, but it’s definitely not all me. Pretty much all of my recipes are originally from my family. Some are from other websites, and I’ll give you links to the originals if that’s the case. Of course my recipes aren’t just the copied recipe of all these people, there are some tweeks to each recipe to make it just right. Another big person behind A Cookie a Day is my husband Steven. Together we are pretty passionate about food. He comes up with the greatest ideas and together we translate those ideas into some pretty dang good food.
The name for A Cookie a Day is a play off of my maiden name which is Day. I really like having that piece of me in the name because I love that I’m a Day!
I also love that I am a member of the Church of Jesus Christ of Latter-Day Saints. You’ll see references to the 18 month mission I served preaching the Gospel of Jesus Christ in the New England area. I served in the gorgeous states of Maine, Vermont, and New Hampshire. I love New England and the people there! They have pretty good food there too. The one thing I’ve yet to try that’s popular out there (apparently) is apple pie with cheese. I heard a saying there that goes, “apple pie without cheese is like a hug without a squeeze.” So you might find a blog post about that later. That’s New Englanders for you; they’re wicked!
The last thing I feel to mention is that I am a particular fan of baking and making the sweeter things in life. In fact, the sweeter the better! So I’m sorry that there are so many dessert recipes, and not so many of the dinner and breakfast recipes (but let’s be honest, half the things we eat for breakfast are basically just morning dessert). I have a thing for white chocolate too. Most of the things I bake have a white chocolate variation just because I love it! I really just like experimenting. For example, replacing chocolate chips with Skittles in a cookie is pretty good.
