Cranberry Orange Oatmeal Cookies

Ingredients

For Cookies
Zest of One Orange
3/4 Cups Butter (cold and cut into cubes)
3/4 Cups Sugar
3/4 Cup Brown Sugar
2 Eggs
1 Tsp Vanilla
1 and 1/4 Cups Flour
1 Tsp Baking Soda
1/2 Tsp Salt
1 Tsp Cinnamon
3 Cups Old-Fashioned Oats
1 Cup Toasted and Chopped Nuts (I use a mix of walnuts, pecans, and almonds)
1 Cup Craisins

For Glaze
1/4 Cup Melted Butter
1/4 Cup Orange Concentrate (warmed up)
1 Tsp Vanilla
2 and 1/4 Cups Powdered Sugar

Instructions

Cookies: Preheat oven to 375 degrees Fahrenheit. Toast and chop your nuts (cool as much as you can). Zest your orange. Put zest, butter, sugar, and brown sugar in stand mixer bowl and mix together (there will still be chunks of butter. Don’t worry about them being gone until the very last mix of everything). Add eggs and vanilla and mix. Add flour, baking soda, salt, cinnamon, and oats. Mix until mostly combined. Add nuts and craisins. Mix until no more butter chunks remain and dough has come together (there still might be a chunk or two of butter, but just get them out mostly). Dough will still be kind of sticky. Split dough into 16 to 24 even balls. Smash down a bit on top since cookies won’t spread much, and bake for 9 minutes.

Glaze: while cookies are baking, melt butter and warm up orange concentrate in microwave. Put all ingredients in a bowl and mix together using a hand blender until everything is combined and smooth.

Finish Off: as soon as the cookies come out/while they are still warm, put a spoonful of glaze on top and gently smooth around to cover the cookies. Some glaze will drip off the sides, so either leave the cookies on the pan they were baked on for this, or put the cookies on a cooling rack on top of another pan to catch all the frosting as you put it on to lessen the mess. It’s important to do it while the cookies are still hot or at least warm so the glaze will firm up as the cookies cool. Enjoy!
