Dark Chocolate Chip Cookies with Dates and Walnuts (Gluten Free)

Ingredients

1 and 1/2 Cups Raw Walnuts
1 Cup Medjool Dates (no pits)
1/4 Teaspoon Salt
1/2 Teaspoon Baking Soda
1 Teaspoon Vanilla
1 Egg
1/2 Cup Dark Chocolate Chips (can use milk chocolate or something else, dark just pairs well here)

Instructions

Preheat oven to 350 Degrees Fahrenheit. Place walnuts and dates in a food processor and process until fine like flour. Put in mixing bowl, add remaining ingredients, and mix with mixer until everything is combined. Spoon on cookie sheet lined with parchment paper with a couple inches in between each cookie. Bake for 10-15 minutes.
