Coconut Lime Cookies

Ingredients

For the Cookie:
1 Cup Cold Butter
3/4 Cup Sugar
1 Cup Brown Sugar
2 Tsp Vanilla
2 Eggs
2 Cups Flour
1 Tbsp Cornstarch
1Tsp Baking Soda
1 Tsp Salt
1 Tsp Cream of Tartar

For the Frosting:
2 Tbs Softened Butter
3 Tbsp Lime Juice
1 Tsp Lemon Juice
1/4 Tsp Vanilla
1/2 Tsp Coconut Extract
2 Cups Powdered Sugar

Instructions

Cookie: Preheat your oven to 350 degrees Fahrenheit. Cut the cold butter into cubes. Using your stand mixer with the paddle attachment, mix butter, sugar, and brown sugar until butter is in smaller chunks. Add vanilla and eggs and mix until incorporated (there will still be little chunks of butter). Add flour, cornstarch, baking soda, salt, and cream of tartar. Mix until all incorporated, then crank up the speed on your mixer for 30 seconds or so until you don’t see any more butter chunks and no longer! For best results, bake right away rather than refrigerate the dough. Make balls with 2-3 tablespoons of cookie dough and place them on an un-greased baking sheet every couple inches. The bigger the balls, the further away from each other they should be placed. These spread a lot (don’t add extra flour in an attempt to fix this, it compromises the flavor). Bake for 12-13 minutes or until the edges are browned and the middle of the cookie isn’t completely raw. Let the cookies cool on the pan. (can be stored in an airtight container in the fridge for a few days, or in the freezer for a couple weeks)

Frosting: Put all the ingredients in a medium bowl or the bowl for your stand mixer. Using a hand mixer with the whisk attachment or your stand mixer with the whisk attachment, combine all ingredients and whip until fluffy.

Assembly: Once the cookies are cooled, take them off the pan and pair each one with a cookie of similar shape and size, then cut in half to make the sandwich part of each cookie. Spread frosting on one half of each prepared sandwich, top with the other half and enjoy!!

Yield: about 2 dozen

Variation: Spread dough in a 9X13 pan and bake until golden brown on edges and a little in the middle. Spread frosting on top evenly and enjoy!
