Ingredients
For the Bars:
1 Cup Butter (softened)
1 Cup Sugar
1 Cup Brown Sugar
1 Tsp Vanilla
2 Eggs (or sub flax eggs)
1 Cup Peanut Butter
2 Cups Old Fashioned Oats
2 Cups Flour
1 Tsp Baking Soda
1 Tsp Salt
For Peanut Butter Topping:
1 and 1/2 Peanut Butter
For the Frosting:
1/2 Cup Butter (softened)
1/4 Cup Milk
2 Tsp Vanilla
1/4 Cup Cocoa
3 Cups Powdered Sugar
Instructions
Preheat oven to 350 degrees Fahrenheit. Get a 17X12X1 inch pan (or whatever pan you have that is closest to that size) and lightly spray with oil.
For the Bars: with hand or stand mixer, combine butter, sugar, brown sugar, and vanilla together. Add eggs and peanut butter and mix in. Mix in oats, flour, baking soda, and salt. Put batter in prepared pan and bake for 12-15 minutes. Pull out.
For the Peanut Butter Topping: put small dollops of peanut butter all over the top of the bars right after they come out of the oven. When the peanut butter is all melted, gently spread across the top of the bars. Put in fridge.
For the Frosting: using a hand mixer, combine all ingredients until fluffy and smooth. Spread across the top of the bars once the peanut butter is set. Enjoy!
