Ingredients
1/3 Cup Butter (cold)
1 Cup Brown Sugar
1 Egg
1 Tbsp Vanilla
1 and 1/2 Cup Flour
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
1/2 Cup Chopped Cashews, Walnuts, or Pecans (optional, but delicious!)
1/2 Cup White Chocolate Chips (not really optional in my mind)
Instructions
Preheat oven to 375 degrees Fahrenheit. Get a frying pan and toast your nuts on the stove (just cook them on medium heat while stirring occasionally until they smell good and have browned a bit). Stick in fridge so they can cool off before putting in cookie dough. Cut butter into cubes and mix with brown sugar, egg, and vanilla until combined with butter chunks remaining in the stand mixer with paddle attachment. Add flour, baking powder, baking soda, salt, nuts, and white chocolate chips and mix until the dough pulls all together and no butter chunks remain. Put balls of dough (about 3 Tablespoons per ball) on ungreased cookie sheet and bake for 8 minutes.
Yield: about 9 cookies
