Chocolate Oatmeal Cookies

Ingredients

3/4 Cup Butter (cold)
1 Cup Brown Sugar
1/2 Cup Sugar
2 Eggs
1 Tsp Vanilla
1 and 1/2 Cups Flour
1/4 Cup Cocoa
2 and 1/2 Cup Oats
1 Tsp Baking Soda
1 Tsp Baking Powder
1/2 Tsp Salt
1/2 Cup White Chocolate Chips
1/2 Cup Butterscotch Chips

Instructions

Preheat oven to 375 Degrees Fahrenheit. Cut cold butter into cubes and mix butter, brown sugar, and sugar in stand mixer with paddle attachment until combined with large butter chunks remaining. Add egg and vanilla and mix until combined with smaller, but butter chunks still remaining. Add flour, cocoa, oats, baking soda, baking powder, and salt and mix for 30 seconds. Add white and butterscotch chips and mix until the dough comes together and no butter chunks remain. Put dough balls (3 Tablespoons-ish in each ball) on ungreased baking sheet and bake for 7 minutes.

Yield: about 15-20 cookies
