Levain Chocolate Chip Cookies (a copycat of a copycat)

Ingredients

1 Cup Butter (cold)
3/4 Cup Brown Sugar
1/2 Cup Sugar
2 Eggs
1 Tsp Vanilla
2 1/2 – 2 3/4 Cup Flour
1 Tbsp Corn Starch
1 Tsp Baking Powder
1 Tsp Baking Soda
1/2 Tsp Salt
2 Cups Walnuts
2 Cups Semi-sweet Chocolate Chips

Instructions

Preheat oven to 410 degrees Fahrenheit. Cut butter into cubes and mix with sugar and brown sugar until there are only a few small chunks of butter left. Don’t overmix any of this! Add eggs and vanilla and mix just until incorporated. Add flour, corn starch, baking powder, baking soda, and salt. Mix until loosely combined. Add walnuts and chocolate chips (if not adding walnuts, put at least another cup of chocolate chips). Mix for 30 more seconds with mixer, then finish pressing dough together by hand. Dump dough onto counter and cut into 8 pieces. Loosely form each piece into a ball and put 4 on an ungreased cookie sheet. If the dough isn’t very firm, refrigerate for 15 minutes. Bake for 11 minutes. If doing smaller cookies, bake for 9 minutes.
