Million Dollar Sweet Potato Casserole

I know sweet potato and yam dishes are traditionally Thanksgiving, and sometimes Christmas-time dishes, but why limit yourself? This is comfort food for any season. Lots of butter, lots of sugar, and nuts (those are optional of course). They sell sweet potatoes year-round, so try this today!

Million Dollar Sweet Potato Casserole

Casserole:
3 Cups Cooked and Mashed Sweet Potato (2 medium/large potatoes)
1 Cup Sugar
2 Eggs
1 Tsp Vanilla
1/3 Cup Milk
1/2 Cup Butter
Topping:
1 Cup Packed Brown Sugar
1/3 Cup Flour
1/3 Cup Butter
1 Cup Finely Chopped Pecans (walnuts work too)

Combine sweet potatoes, sugar, eggs, vanilla, milk, and 1/2 cup butter; beat with mixer until smooth. Pour into a 2-quart shallow casserole dish (9X9 dish). Combine brown sugar, flour, 1/3 cup butter, and pecans. Sprinkle over top of casserole. Bake at 350°F for 30 minutes.
